For the pickled carrot:

For the beef :
300g beef
2 tbs minced lemongrass
1 1/2 tbs oyster sauce
1/2 tbs sesame oil
For the nuoc mam sauce :
2 tsps minced garlic
Chopped chili (optional)
2 tbs white sugar
2 tbs vinegar
3 tbs fish sauce
4 tbs fresh water
Black pepper
Vegetable oil
Crushed peanuts, fresh herbs (optional)
